Ingredients:
1½ cups Monterey Jack cheese, shredded
½ tablespoon butter, melted
5-ounce frozen spinach, thawed
Salt and black pepper
2 eggs, beaten
Directions:
Grease and preheat the oven to 350 degrees. Heat butter on medium-low heat in a large skillet and add spinach. Cook for about 3 minutes and set aside. Mix together Monterey Jack cheese, eggs, spinach, salt and black pepper in a bowl.
Transfer the mixture into prepared pie dish and place in the oven. Bake for about 30 minutes serve by cutting into equal sized wedges.
