Cream Crepes

Ingredients:

• 1 teaspoon Splenda
• 2 tablespoons coconut flour
• 2 tablespoons coconut oil, melted and divided
• 2 organic eggs
• ½ cup heavy cream

Directions:

1. Put 1 tablespoon of coconut oil, eggs, Splenda and salt in a bowl and beat until well combined. Sift in the coconut flour slowly and beat constantly. Stir in the heavy cream and continuously beat until the mixture is well combined.
2. Put half mixture in a pan. Cook each side and repeat with the remaining mixture. Dish out to serve and enjoy. For meal prepping, wrap each cream crepe into wax paper pieces and place into a resealable bag. Freeze for up to 3 days and remove from the freezer. Microwave for about 2 minutes to serve.
