Ingredients:
• 3 tbsp. coconut flour
• 3 tbsp. sour cream
• ¼ cup butter softened
• 4 eggs
• 1 tsp. baking powder
• 1 tsp. vanilla extract
• 1 tbsp. powdered sweetener
• ¼ cup water
Directions:
1. Incorporate all dry ingredients in a medium-sized bowl. Mix well and set aside. In a large mixing bowl, combine sour cream with butter, vanilla extract, and water. Mix on high for 2 minutes. Stir eggs, one at a time, beating constantly.
2. Add dry ingredients and continue to mix for 3 minutes. Grease a non-stick skillet with oil and heat over medium-high heat. Using a large spoon, pour batter into skillet and cook for 2 minutes. Flip and continue cooking.
3. Serve immediately.
