Ingredients
• 2-pound broccoli rabe
• 4boneless pork loin chops
• 1 teaspoon salt
• 1 teaspoon garlic powder
• 2 teaspoon pepper
• 1tablespoon canola oil
• 2 cup sliced roasted sweet red pepper
• 4 ounces fresh mozzarella cheese
Direction:
1. Preheat broiler. Trim 2 broccoli rabe; discard any coarse leaves.
2. Bring 4 cups of water to a large saucepan. Boil broccoli rabe uncovered, 5 minutes. Remove and immediately drop into ice water. Pat dry.
3. Sprinkle pork chops with seasonings, in a broiler-safe skillet, heat oil at medium-high heat. Cook pork chops for 8 minutes on both sides. Remove from heat.
4. Layer chops with red pepper, broccoli rabe, and cheese. Broil 4 from heat for 2 minutes.
