Ingredients
• 1/3 cup pistachios, finely chopped
• 1/4 cup panko bread crumbs
• 1/4 cup grated Parmesan cheese
• 1 salmon fillet (One pound)
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
Direction:
1. Preheat oven to 400°F. Toss pistachios with bread crumbs and cheese.
2. Place salmon on a greased foil-lined in. Pan, skin side down; season.
3. Top with pistachio mixture, pressing to adhere. Bake, uncovered, for 20 minutes.
