Chocolate Protein Pancakes

Ingredients:

• 1 cup canned coconut milk
• ¼ cup coconut oil
• 8 large eggs
• 2 scoops (40g) egg white protein powder
• ¼ cup unsweetened cocoa powder
• 1 teaspoon vanilla extract
• Liquid stevia extract, to taste.

Directions:

1. In a food processor, add the coconut milk, coconut oil, and eggs.

2. Pulse the mixture several times and then add the other ingredients.

3. Mix until smooth and well–change sweetness to taste.

4. Heat medium-heat a non-stick skillet

5. Using about 1⁄4 cup per pancake, spoon in batter

6. Cook until bubbles form at the batter’s surface, then flip carefully.

7. Let the pancake cook until it browns on the underside.

8. The leftover batter is moved to a plate to keep warm and repeat.
