Beef and Eggplant Kebab

Ingredients:

• 3 tbsp. oil
• 1/2 tsp. dried thyme
• 1/2 tsp. oregano
• 2 eggs (beaten)
• 1/2 eggplant
• 1/2 tsp. chili pepper (ground)
• 1/4 cup olive oil
• 4 garlic cloves (crushed)
• 1 cup parsley leaves (chopped)
• 1 lb. beef (minced)
• 1 tsp. salt
• 1/2 tsp. black pepper

Directions:

1. Cut the eggplant into thin slices of about half inch. Season with salt and set aside. Put minced meat in a large bowl, add thyme, eggs, chili pepper, onions, parsley, olive oil, garlic, salt, oregano, and black pepper.
2. Combine the mixture. Shape equal-sized patties with wet hands. Preheat a skillet over medium-high heat and grease with oil. Rinse the eggplant slices sprinkled with salt and pat dry with hand or paper towel. Thread eggplant slices and patties alternately onto skewers and place on the preheated skillet.
3. Flip the sides occasionally and cook for 15 minutes. Remove from the heat and garnish with parsley. Serve warm with low-carb pita bread.
