Chinese Pulled Pork – Char Siu

Servings: 6

Ingredients:

• 1 kg pork shoulder or loin
• 1 cup chicken broth homemade is best
• 4 tablespoons sugar free tomato sauce homemade is best
• 1 tablespoon tomato paste
• 2 tablespoons garlic paste
• 4 tablespoons soy sauce
• 5 drops liquid sweetener
• 2 teaspoons ginger paste
• 1 teaspoon smoked paprika

Directions:

1. Place the pork in the bottom of the slow cooker. Combine all remaining ingredients and pour over the pork, ensuring it gets underneath as well.
2. Cook on low for 7 hours. Shred the pork with a fork and stir through the sauce, cooking for a further 30 – 60 minutes until the sauce has thickened to your liking, or eat it straight away.
