Ingredients:
• 1 ½ pounds boneless pork tenderloin
• 1 tablespoon coconut oil
• 1 tablespoon fresh chopped rosemary
• Salt and pepper
• 1 tablespoon olive oil
• 2 cups cauliflower florets
Directions:
1. Rub the coconut oil into the pork, then season with the rosemary, salt, and pepper. Heat up the olive oil over medium to high heat in a large skillet.
2. Add the pork on each side and cook until browned for 2 to 3 minutes. Sprinkle the cauliflower over the pork in the skillet.
3. Reduce heat to low, then cover the skillet and cook until the pork is cooked through for 8 to 10 minutes. Slice the pork with cauliflower and eat.
