Ingredients
• ¼ cup butter
• 2 tablespoons lemon juice
• 2 teaspoons fresh lemon zest
• 1 teaspoon dried oregano
• 2 teaspoons paprika
• 1 teaspoon onion powder
• 1 teaspoon garlic powder
• Salt and ground black pepper
• 1 (4-pound) grass-fed whole chicken
Directions:
1. Preheat the grill to medium heat. Grease the grill grate. Place onto a large cutting board, breast-side down. Mix butter, lemon juice, lemon zest, oregano, spices, salt, and black pepper.
2. Cut both sides of backbone. Remove the backbone. Flip and open. Firmly press breast to flatten.
3. Coat the whole chicken with the oil mixture. Grill for 20 minutes.
4. Remove from the grill and set aside for 10 minutes.
