Preparation Time: 10.0 minutes Cooking Time: 8.0 – 10.0 minutes Resting Time: 5.0 minutes Total Time: Approx. 25.0 minutes Servings: 4.0

Ingredients

• Lamb Chops: 1.5 lbs (24.0 oz / 680.4 g) grass-fed lamb loin chops, about 1.0 inch thick
• Parsley: 0.53 oz / 15.0 g (approx. 0.25 cup) fresh parsley, finely chopped
• Mint: 0.18 oz / 5.0 g (approx. 2.0 tbsp) fresh mint leaves, finely chopped
• Olive Oil: 0.5 oz / 14.0 g (approx. 1.0 tbsp)
• Lemon Juice: 0.55 oz / 15.5 g (approx. 1.0 tbsp) fresh lemon juice
• Salt: 0.11 oz / 3.0 g (approx. 0.5 tsp)
• Black Pepper: 0.02 oz / 0.6 g (approx. 0.25 tsp) ground black pepper

Directions

1. Prepare the Herb Marinade: In a small bowl, combine the finely chopped parsley (0.53 oz / 15.0 g), mint (0.18 oz / 5.0 g), olive oil (0.5 oz / 14.0 g), and lemon juice (0.55 oz / 15.5 g). Stir to create a fresh herb paste.
2. Season the Lamb: Pat the lamb chops (24.0 oz / 680.4 g) dry with a paper towel. Place them in a large bowl. Pour the herb mixture over the chops, adding the salt (0.11 oz / 3.0 g) and pepper (0.02 oz / 0.6 g). Use your hands to rub the marinade evenly onto all sides of the lamb.
3. Preheat Grill: Let the lamb chops rest at room temperature while you preheat your grill to medium-high heat (about 400°F – 450°F / 205°C – 230°C). Clean and grease the grill grates well.
4. Grill the Chops: Place the lamb chops on the hot grill.
o For medium-rare, grill for 3.0 – 5.0 minutes per side.
o For medium, grill for 5.0 – 7.0 minutes per side.
o For the most accurate results, use a meat thermometer. You are aiming for an internal temperature of 135.0°F (57.0°C) for medium-rare or 145.0°F (63.0°C) for medium.
5. Rest the Meat (Crucial Step): Remove the chops from the grill and transfer them to a cutting board. Let them rest for 5.0 – 10.0 minutes. This allows the juices to redistribute.
6. Serve: Serve the lamb chops warm.
