Pork Chops in Cream Sauce

Ingredients

• 4 large boneless rib pork chops (approx. 7 oz / 198g each, or 28 oz / 794g total)
• Salt, to taste
• 1 fl oz (30 mL) olive oil (weighing 1 oz / 28g)
• 1.06 oz (30g) yellow onion, finely chopped
• 0.14 oz (4g) fresh rosemary, chopped
• 0.53 oz (15g) Dijon mustard
• 2.67 fl oz (80 mL) homemade chicken broth (weighing 2.8 oz / 80g)
• 0.5 oz (14.2g) unsalted butter
• 5.33 fl oz (160 mL) heavy cream (weighing 5.64 oz / 160g)
• 1.06 oz (30g) sour cream
• 0.28 oz (8g) fresh parsley, chopped (for garnish)

Directions

1. Prep and Sear Chops: Pat the pork chops dry and season them generously on all sides with salt. Heat the olive oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the pork chops and sear for 3-4 minutes per side, until a golden-brown crust forms. Remove the chops from the skillet and set them aside on a plate.
2. Sauté Aromatics: Reduce the heat to medium. In the same skillet, add the chopped onion and fresh rosemary. Sauté for 2-3 minutes, stirring frequently, until the onion is soft and fragrant.
3. Deglaze and Simmer: Stir in the Dijon mustard and chicken broth, using a spoon to scrape up any browned bits from the bottom of the pan. Return the seared pork chops (and any juices from the plate) to the skillet. Bring the liquid to a boil.
4. Cook the Chops: Once boiling, reduce the heat to low, cover the skillet, and let the chops simmer for 20 minutes, or until they are cooked through and tender.
5. Make the Cream Sauce: Transfer the cooked pork chops to a plate and set aside. Add the butter, heavy cream, and sour cream to the remaining liquid in the skillet. Whisk continuously over low heat until the butter melts and the sauce is smooth and slightly thickened. Do not let it boil.
6. Combine and Serve: Return the pork chops to the skillet, spooning the cream sauce over them. Let them cook in the sauce for 3 more minutes to heat through. Serve immediately, garnished with fresh parsley.
