Ingredients
• 12 oz. cooked chicken breast
• 6 slices crumbled bacon
• 3 boiled eggs cut into cubes
• 1 cup cherry tomatoes cut into halves
• 1/2 small sliced red onion
• 1 large avocado(s)
• 1/2 stick finely chopped celery
Salad Dressing
• 1/2 cup olive oil mayonnaise
• 2 tbsp. sour cream
• 1 tsp. Dijon mustard
• 4 tbsp. extra virgin olive oil
• 2 cloves minced garlic
• 2 tsp. lemon juice
• 4 cups lettuce
• Salt and pepper to taste
Directions
1. Combine all the ingredients together and mix them well for the salad dressing. Then, combine chicken, tomatoes, bacon, eggs, red onions, and celery together. Add about ¾ of the salad dressing and mix them well.
2. Add the avocado and toss together gently. Check the taste and, if needed, add the remainder of the salad dressing as well. Finally, add salt and pepper to taste and then serve it over lettuce.
