Cauliflower Mac & Cheese

Ingredients:

• 1 Cauliflower
• 3 tbsp. Butter
• ¼ cup unsweetened almond milk
• ¼ cup Heavy cream
• 1 cup Cheddar cheese

Directions:

1. Slice the cauliflower into small florets. Shred the cheese. Prepare the oven to 450º Fahrenheit. Wrap baking pan with foil.
2. Melt two tablespoons butter. Mix the florets, butter, salt, and pepper. Roast the cauliflower on the baking pan for 15 minutes.
3. Warm rest of the butter, milk, heavy cream, and cheese in the microwave. Pour the cheese and serve.
