Ingredients

For the Creamy Mushroom Sauce:

• Butter: 1.0 oz (28.4 g)
• Garlic: 3 cloves, minced (approx. 0.5 oz / 15 g)
• Dried Thyme: 1 teaspoon (approx. 0.04 oz / 1 g)
• Fresh Button Mushrooms: 1.5 cups, sliced (approx. 4.5 oz / 127.5 g)
• Cream Cheese: 7.0 oz (198.5 g), softened or cut into cubes
• Heavy Cream: 0.5 cup (approx. 4.2 oz / 120 g)
• Salt and pepper to taste

For the Beef:

• Beef Tenderloin Filets: 4 (6.0 oz / 170.1 g) grass-fed filets
• Butter: 1.0 oz (28.4 g)
• Salt and freshly ground black pepper to taste

Directions

1. Prepare the Mushroom Sauce:

1. Place a medium skillet over medium heat and melt the 1.0 oz (28.4 g) of butter for the sauce.
2. Add the minced garlic and dried thyme, and sauté for about 1 minute until fragrant.
3. Add the sliced mushrooms, season with a pinch of salt and pepper, and cook for about 7 minutes, stirring occasionally, until they are browned and tender.
4. Reduce the heat to low and add the 7.0 oz (198.5 g) of cream cheese. Stir continuously until the cream cheese is fully melted and blended with the mushrooms.
5. Slowly whisk in the 0.5 cup (approx. 4.2 oz / 120 g) of heavy cream. Let the sauce simmer gently (do not boil) for 3-5 minutes, until it thickens. Keep the sauce warm on the lowest heat setting while you cook the steaks.

2. Cook the Steaks:

1. Pat the beef filets dry with a paper towel. Season all sides generously with salt and pepper.
2. In a large cast-iron skillet or heavy-bottomed pan, melt the remaining 1.0 oz (28.4 g) of butter over medium-high heat until it sizzles.
3. Carefully place the filets in the hot skillet. Cook for 3-5 minutes per side, depending on the thickness of the steaks and your desired level of doneness (3-4 minutes per side is typical for medium-rare).
4. Remove the steaks from the skillet and let them rest on a cutting board for 5 minutes. This helps the juices redistribute, ensuring a tender steak.

3. Serve:

1. Place each rested beef filet on a plate.
2. Generously spoon the warm, creamy mushroom sauce over the top of each steak and serve immediately.
