Ingredients

2 tbsp olive oil

1 small yellow onion, chopped

1 green bell pepper, seeded and chopped

4 garlic cloves, minced

1 jalapeño pepper, chopped

1 tsp dried thyme, crushed

2 tbsp red chili powder

1 tbsp ground cumin

2 pounds (32 oz / 907 g) lean ground turkey

2 cups fresh tomatoes, chopped finely

2 ounces (57 g) sugar-free tomato paste

2 cups homemade chicken broth

1 cup water

Salt and ground black pepper, as required

1 cup cheddar cheese, shredded
Directions

In a large Dutch oven, heat oil over medium heat and sauté the onion and bell pepper for about 5–7 minutes.

Add the garlic, jalapeño pepper, thyme, and spices and sauté for about 1 minute.

Add the turkey and cook for about 4–5 minutes.

Stir in the tomatoes, tomato paste, and cacao powder, and cook for about 2 minutes.

Add in the broth and water and bring to a boil.

Now, reduce the heat to low and simmer, covered for about 2 hours.

Add in salt and black pepper and remove from the heat.

Top with cheddar cheese and serve hot.
