    Scrambled Eggs with Tomato and Green Onions

    (Total Time: 35 MIN| Serves: 2)

    Ingredients:
    For eggs:
    3 large eggs
    ½ cup cottage cheese
    1 cup button mushrooms, sliced
    ½ tomato, finely chopped
    2 spring onions, chopped
    ¼ cup milk

    Spices:
    2 tbsp olive oil
    ½ tsp salt

    Directions:

    1. Grease the bottom of your instant pot with oil and press the ‘’Steam’’ button. Add onions and cook for 3 minutes.
    2. Now add tomatoes and mushrooms. Continue to cook until all the liquid evaporates, for 5-6 minutes.
    3. Meanwhile, whisk the eggs, cottage cheese, and milk. Season with salt and optionally some freshly ground black pepper.
    4. Pour the mixture into the pot and give it a good stir. Cook for 2 minutes.
    5. Serve warm.
