Steamed Pork Neck

(Total Time: 40 MIN| Serves: 3)

Ingredients:

1 lb pork neck, cut into 3 pieces

3 garlic cloves, crushed

2 cups cauliflower florets

3 tbsp apple cider vinegar

4 tbsp olive oil

Spices:

2 tsp sea salt

1 tsp white pepper, freshly ground

1 tbsp cayenne pepper

1 tbsp dried celery

Directions:

Rinse the meat under cold running water and place on a cutting board. Using a sharp cutting knife, cut into 3 equal pieces. Rub each piece with salt, white pepper, cayenne pepper, and celery. Set aside.
Grease a small round baking pan with oil and add cauliflower. Top with pork and sprinkle with apple cider vinegar.
Plug in the instant pot and position a trivet at the bottom of the inner pot. Place the baking pan on the trivet and pour in 2 cups of water in the inner pot.
Seal the lid and set the steam release handle to the ‘’Sealing’’ position. Press the ‘’Manual’’ button and set the timer for 25 minutes on high pressure.
When done, perform a quick pressure release and open the lid.
Remove the baking pan from the pot and chill for a while. Serve with some Greek yogurt or cottage cheese.
