• 8 cloves garlic, minced
• ½ cup (120 ml) dry red wine, such as Merlot or Cabernet Sauvignon
• 1 (14.5 oz / 411g) can diced tomatoes, undrained
• 2 cups (480 ml) beef broth
• 4 oz (113g) cremini mushrooms, sliced
• 2 bay leaves
• 1 tsp salt, or to taste
• ½ tsp black pepper, or to taste
• For the Gremolata (Optional Garnish)
• ¼ cup (15g) fresh flat-leaf parsley, finely chopped
• 1 lemon, zested
