Ingredients

• 2 lbs / 900g stewing beef, cut into 1-inch cubes
• 20 fl oz / 600ml low-sodium beef stock
• 2 large Spanish onions, minced
• 2 medium red onions, minced
• 4 cloves garlic, minced
• 4 spring onions, chopped
• 1 tbsp / 15g Herbes de Provence seasoning
• Salt and black pepper to taste
