• ½ lb / 225g chuck roast, diced into 1-inch cubes
• 6 oz / 170g Spanish chorizo, minced or casing removed
• 1 tbsp / 15ml olive oil
• 1 medium onion, chopped
• 1 medium carrot, chopped
• 1 celery stalk, chopped
• 1 green bell pepper, chopped
• ½ cup / 70g mushrooms, chopped
• ½ cup / 120ml dry red wine, like Rioja
• ½ cup / 120ml beef broth
• 1 tsp smoked paprika
• 1 tsp dried oregano
• Salt and freshly ground black pepper, to taste
