Best Beans-Free Chili
(Total Time: 1¼ HOURS| Serves: 10)
Ingredients:
1 tbsp. olive oil
½ chopped large yellow onion
Salt, to taste
2½ pounds grass-fed ground beef
8 minced garlic cloves
2 (15-ounce) can sugar-free diced tomatoes with liquid
1 (6- ounce) can sugar-free tomato paste
1 (4-ounce) can green chiles with liquid
2 tbsp. Worcestershire sauce
¼ cup red chili powder
2 tbsp. ground cumin
1 tbsp. dried oregano
2 bay leaves
Freshly ground black pepper, to taste
Directions:
Place the oil in the Instant Pot and select “Sauté”. Then add the onion and salt and cook for about 10-15 minutes or until caramelized, stirring frequently.
Add garlic and cook for about 1 minute.
Add beef and cook for about 8-9 minutes.
Select the “Cancel” and stir in the remaining ingredients.
Secure the lid and select “Meat/Stew” and just use the default time of 35 minutes.
Select the “Cancel” and carefully do a “Quick” release.
Remove the lid and discard bay leaves.
Serve hot.
