Ingredients:
1 green bell pepper, finely chopped
1 cup shredded mozzarella
3 tbsp. Parmesan cheese, grated
¾ cup olive oil
3 garlic cloves, crushed
Spices:
2 cups fresh basil, chopped
1 tsp salt
¼ tsp black pepper
Directions:
Grease the stainless steel insert with some oil and press the ‘Saute’ button. Add bell peppers and garlic. Stir-fry for 5 minutes.
Now add the remaining ingredients and pour in ¼ cup of water. Seal the lid and press the ‘Manual’ button. Set the timer for 12 minutes.
When done, perform a quick release and open the lid. Transfer the pesto to a bowl and cool to a room temperature.
Refrigerate until use.
