    CUCUMBER & RASPBERRY MOJITO MOCKTAIL

    MAKES 2 servings

    This refreshing “mocktail” can also be made into a real mojito with the addition of a bit of white rum or vodka. The flavors of mint and cucumber with a hint of raspberry make this an ideal summer beverage—virgin or not!

    6 lime wedges

    10 mint leaves

    6 slices cucumber

    2 tablespoons granulated low-carb sweetener of your choice

    ½ cup (60 g) fresh raspberries

    Crushed ice, to top

    Seltzer water, to top

    2 fresh mint sprigs, for garnish

    NOTE

    If you prefer a boozy alternative, add 1½ ounces (45 ml) of white rum or vodka to each glass with the raspberries.

    1. Divide the lime wedges, mint, cucumber, and sweetener between two tall 12-ounce (360-ml) glasses with sturdy bottoms. Muddle (crush and mix) the ingredients with a cocktail muddler or the handle of a wooden spoon.
    2. Put ¼ cup (30 g) of the raspberries in each glass and fill three-quarters full with crushed ice. Top each glass with seltzer water, stir well, and finish with additional crushed ice and a sprig of fresh mint. Serve immediately with a straw.
