Crustless Quiche
This can be your go-to recipe when you’re in the mood for a light dinner.
Ingredients
• 1½ cups of halved green tomatoes
• 9 large eggs
• 6 oz of mozzarella cheese
• 1 cup of fresh basil
• ½ cup of almond milk, unsweetened
• 4 cloves of garlic, minced
• ¾ tsp of sea salt
• ¼ tsp of black pepper
Instructions
• Preheat the oven to 350 °F.
• In a fresh bowl, add the basil, tomatoes, garlic, and 4 oz mozzarella cheese.
• Mix it well.
• Transfer mixture to a 9” round ceramic pan.
• In a separate bowl, mix together the eggs, milk, salt, and black pepper.
• Add the egg mixture to the ceramic pan.
• Bake it for 30 minutes.
• Remove from oven, and sprinkle the remaining 2 oz mozzarella cheese over the top. Bake it for 15 more minutes.
• Serve.
