German Red Cabbage

Red cabbage, seasoned with onion, bacon, and a splash of vinegar, makes a delicious side dish for any meat, but it is especially good with sausage, brats, or pork roast.

SLOW COOKER SIZE: LARGE

1 (16-ounce) package sugar-free bacon
1 medium onion, chopped
2 garlic cloves, minced
1 head red cabbage, quartered, cored, and thinly sliced
¾ cup chicken broth
½ cup apple cider vinegar
Salt and pepper
1.In a large skillet over medium-high heat, cook the bacon until crisp, 6 to 10 minutes. Set the crisp bacon aside.
2.Add the chopped onion to the drippings in the skillet and cook, stirring frequently, until the onion is tender, 3 to 5 minutes. Stir in the garlic and cook for 30 seconds.
3.Place the sliced cabbage in the slow cooker. Pour the onion mixture over the cabbage. Cut the crisp bacon into bite-sized pieces and add to the cabbage. Add the broth, vinegar, and salt and pepper.
4.Cover and cook on Low for 5 to 7 hours or on High for 2½ to 3½ hours, or until the cabbage is tender.
