• 1 English cucumber, about 12 in / 30.5 cm long
• 1 5-oz / 142 g can flaked tuna in water, drained
• 1 dill pickle, finely diced
• 3 tablespoons mayonnaise
• 2 tablespoons finely diced red onion
• 2 teaspoons finely chopped fresh parsley
• 1 teaspoon lemon juice
• 1 clove garlic, minced
• ½ teaspoon Dijon mustard

1. Prepare the boats: Cut the cucumber in half lengthwise. Use a spoon to gently scoop out the seeds, creating a hollow channel. Cut each half crosswise to make four cucumber ‘boats’.
