Ingredients

• 1 cup / 96g almond flour
• ½ cup / 58g minced almonds
• 2 large eggs, beaten
• 3 tbsp / 45ml coconut oil, melted
• 1 tsp / 5g baking powder
• ½ tsp / 2.5g salt
• ¼ tsp / 1g ground cinnamon
• ½ tsp powdered stevia, or to taste

3. Add the beaten eggs and melted coconut oil to the dry mixture. Stir with a spatula until just combined into a smooth batter. Do not overmix.
4. Lightly grease three oven-safe mugs. Evenly divide the batter among the mugs, filling each about one-third to one-half full to allow room for rising.
5. Pour 1 cup of water into your Instant Pot insert and place a trivet inside. Carefully arrange the mugs on top of the trivet.
6. Secure the lid, set the steam release handle to ‘Sealing,’ and cook on High Pressure for 4 minutes using the ‘Manual’ or ‘Pressure Cook’ button.
7. Once the timer finishes, allow the pressure to release naturally for 10 minutes before performing a quick release for any remaining pressure.
8. Using oven mitts, carefully remove the hot mugs and place them on a wire rack to cool completely before serving. Enjoy warm with a pat of butter!
