For the Mix:
1 cup almond flour
4 tbsp. melted butter
3 eggs
¼ cup psyllium husk powder
¼ cup cocoa powder
¼ cup coconut milk
¼ cup sour cream
¼ cup erythritol
1 tsp. vanilla
1 tsp. baking powder
For the Filling:
8 oz. cream cheese
8 tbsp. butter
¼ cup sour cream
¼ cup erythritol
¼ tsp. stevia
1 tsp. vanilla
Directions
1. In a bowl, combine all the dry ingredients and slowly add the wet ingredients, mixing well.
2. Spread the dough onto a parchment paper covered cookie sheet. Bake at 350°F for 12-15 minutes.
3. Make the filling by mixing all the ingredients together. When the cake is done, spread the filling over it and roll cake tightly.
