    Cheddar Pancakes – A Breakfast Delight

    Serves: 4

    Preparation time: 30 minutes

    Ingredients:

    4 large egg whites
    2 cups almond meal
    4 ounces cheddar cheese,
    2 tbsp. green onion, finely chopped
    2 cloves garlic, finely chopped
    1 tsp. baking powder
    4 tbsp. olive oil
    ½ cup water
    Oil to grease a skillet
    Preparation: Mix all of the ingredients in a bowl. Use just a bit of oil on the skillet or non-stick frying pan. Pour a bit of the pancake batter and cook until bubbles rise to the surface. Turn with a spatula and cook for about one more minute.

    Serving Suggestion: While these aren’t necessarily a sweet pancake, a simple fruit jam made from berries and sweetened with stevia extract offers an interesting blend of flavors.
