    Chicken Paprikash

    (Total Time: 40 MIN| Serves: 4)

    Ingredients:
    1 ½ pounds Chicken Wings
    1 tbsp. Smoked Paprika
    2 cups Chicken Stock
    1 cup Coconut Milk
    3 tsp Olive Oil
    ½ cup Tomato Puree
    2 tsp Garlic Cloves, minced
    1 cup Onions, diced
    2 Bell Peppers, diced
    2 tsp Arrowroot
    Salt and Pepper, to taste

    Directions:

    1. Heat the oil in your IP on SAUTE.
    2. Add the onions and peppers and cook for 3 minutes.
    3. Add garlic and cook for another minute.
    4. Add the chicken wings (in batches), and cook until browned.
    5. In a bowl, whisk together the paprika, stock, tomato puree and some salt and pepper.
    6. Pour over and close the lid.
    7. Cook on HIGH for 15 minutes.
    8. Release the pressure and stir in the coconut milk and arrowroot.
    9. Cook for 7 minutes more.
    10. Serve and enjoy!
