Forget boring, steamed vegetables! We’re transforming a humble head of cauliflower into a ridiculously decadent, cheese-drenched side dish that will have everyone asking for seconds. Perfectly roasted florets are tossed in a rich, creamy cheddar sauce for a keto-friendly comfort food experience that’s ready in just over 30 minutes. This is the side dish that steals the show.
Ingredients
• 1 medium head cauliflower, about 2 lbs / 900g
• 3 tbsp butter, 1.5 oz / 42g, divided
• ¼ cup unsweetened almond milk, 60ml
• ¼ cup heavy cream, 60ml
• 1 cup shredded sharp cheddar cheese, 4 oz / 113g
• Salt and freshly ground black pepper, to taste
Instructions
1. Directions
2. Preheat your oven to 450°F / 230°C. Line a large baking sheet with foil or parchment paper for easy cleanup. Chop the cauliflower into uniform, bite-sized florets.
3. In a large bowl, toss the cauliflower florets with 2 tablespoons of melted butter, a generous pinch of salt, and freshly ground black pepper. Spread the florets in a single, even layer on the prepared baking sheet. Roast for 15-20 minutes, or until tender and lightly browned at the edges.
4. While the cauliflower roasts, prepare the cheese sauce. In a small, microwave-safe bowl, combine the remaining 1 tablespoon of butter, almond milk, heavy cream, and shredded cheddar cheese. Microwave in 30-second intervals, stirring in between, until the cheese is fully melted and the sauce is smooth. Pour the warm cheese sauce over the roasted cauliflower, toss gently to coat, and serve immediately.

Pro Tips
• For the smoothest sauce, shred your own cheese from a block. Pre-shredded cheeses often contain anti-caking agents that can make the sauce grainy.
• Ensure the cauliflower florets are in a single layer on the baking sheet. Overcrowding will steam the cauliflower instead of roasting it, preventing those delicious crispy edges.
• Add a pinch of smoked paprika, garlic powder, or a dash of hot sauce to the cheese sauce for an extra layer of flavor.
• For a bubbly, golden-brown top, transfer the cheese-coated cauliflower to an oven-safe dish and place it under the broiler for 1-2 minutes. Watch it carefully to prevent burning!
