• 4 medium chicken breasts (about 24 oz / 680g)
• 1½ cups heavy cream / 360ml
• 4½ oz. celery, finely chopped / 128g
• 4 oz. green bell pepper, finely chopped / 113g
• 1 oz. green onions, thinly sliced / 28g
• ¾ cup sugar-free sweet relish / 170g
• ¾ cup mayonnaise / 170g
• 3 large eggs, hard-boiled and chopped
• Salt and black pepper to taste

3. Remove the chicken from the oven and let it cool completely in the pan. Once cooled, discard the cooking liquid and transfer the chicken to a cutting board. Dice or shred the chicken into bite-sized pieces.
