• 1¼ cups / 140g blanched almond flour
• ¼ cup plus 2 teaspoons / 46g psyllium husk powder
• 2 tablespoons / 10g nutritional yeast
• 2 teaspoons / 8g baking powder
• ½ teaspoon / 3g sea salt
• ½ teaspoon / 1.5g garlic powder
• ½ teaspoon / 1.5g onion powder
• ½ teaspoon / 1g dried Italian seasoning
• 2 teaspoons / 10ml apple cider vinegar
• 3 large egg whites
• 1 cup / 240ml hot water
• 2 teaspoons / 6g black and/or white sesame seeds, for topping
Instructions
1. Directions
2. Position an oven rack in the lower third of the oven and preheat to 350°F / 175°C. Line a large, rimmed baking sheet with parchment paper or a silicone mat.
3. In a large mixing bowl, whisk together the almond flour, psyllium husk powder, nutritional yeast, baking powder, salt, garlic powder, onion powder, and Italian seasoning. Continue whisking until fully combined and no clumps remain.
4. Add the apple cider vinegar and egg whites. Using a spatula, begin to mix as you slowly pour in the hot water. Stir just until the dough comes together. Do not overmix.
5. Lightly moisten your hands with water and divide the dough into 6 equal portions. Roll each portion between your palms to form a smooth ball.
6. Arrange the dough balls on the prepared baking sheet, leaving space between them. Sprinkle the tops evenly with sesame seeds.
7. Bake for 55 minutes, or until the rolls are firm, golden brown, and sound hollow when tapped on the bottom. Let them cool on the baking sheet for at least 15 minutes before slicing and serving.

Pro Tips
• Pro-Tips for Perfect Rolls
• Use a light-colored psyllium husk powder (like Now Foods brand) to prevent the rolls from turning purple during baking.
• Ensure your water is hot but not boiling. This helps activate the psyllium husk to create the perfect chewy, bread-like texture.
• Do not overmix the dough once the water is added. Mix just until a uniform dough forms, as overworking it can make the rolls dense.
• Store cooled rolls in an airtight container at room temperature for up to 3 days or in the refrigerator for a week. Reheat briefly in a toaster oven or microwave before serving.
FAQ
Q: Why did my keto rolls turn purple
A: Your rolls may turn purple due to the brand of psyllium husk powder used. To prevent this, we recommend using a light-colored psyllium husk powder, such as the Now Foods brand.
Q: Can I use coconut flour instead of almond flour in this recipe
A: No, this recipe is specifically formulated for blanched almond flour. Coconut flour has very different absorption properties and cannot be substituted 1:1 without altering the other ingredients and affecting the final texture.
Q: How should I store these keto dinner rolls
A: Store the completely cooled rolls in an airtight container. They can be kept at room temperature for up to 3 days or in the refrigerator for up to one week. For best results, reheat them briefly before serving.
Q: What are the net carbs per roll
A: Each keto dinner roll contains 3.4 grams of net carbs. This is calculated by subtracting the fiber (9.2g) from the total carbs (12.6g).
