Lamb with Port Wine and Garlic Gravy

(Total Time: 30 MIN| Serves: 4)

Ingredients:
1 tbsp. Olive Oil
2 pounds Lamb Shanks
½ cup Port Wine
½ cup Chicken Broth
1 tbsp. Butter
1 tbsp. Tomato Paste
1 tsp Balsamic Vinegar
½ tsp Thyme
10 Garlic Cloves, peeled

Directions:

  1. Heat the oil in your IP on SAUTE.
  2. Add the garlic and cook until they turn brown.
  3. Add tomato paste, broth, thyme, and port wine.
  4. Stir to combine and add the lamb shanks.
  5. Close the lid and cook on HIGH for 20 minutes.
  6. Do a natural pressure release.
  7. Transfer the lambs to a plate.
  8. Stir in the butter and vinegar.
  9. Pour the sauce over the shanks.
  10. Serve and enjoy!
