Ingredients

• 5 tbsp / 2.5 oz / 70g butter, softened and divided
• 6 large eggs, lightly beaten
• 1.5 cups / 5.3 oz / 150g almond flour
• 3 tsp / 0.5 oz / 14g baking powder
• 1 scoop / 0.4 oz / 10g MCT oil powder
• 1 pinch pink Himalayan salt

Instructions

1. Preheat oven to 390°F / 200°C. Grease a 9×5-inch loaf pan with 1 tbsp of the butter.2. In a large bowl, combine the eggs, almond flour, remaining 4 tbsp of butter, baking powder, MCT oil powder, and salt.3. Using a hand mixer on medium speed, blend until the batter is completely smooth.4. Pour the batter into your prepared loaf pan and spread evenly.5. Bake for 25 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let cool completely before slicing.
