If you are looking for the perfect crowd-pleaser that fits your lifestyle, these Bacon Wrapped Jalapeno Poppers are a total game-changer. I remember the first time I made these for a weekend gathering; they disappeared from the platter in minutes! They hit that perfect balance of spicy, creamy, and salty without any of the extra carbs. Whether you are hosting a game day or just want a savory treat, this recipe is my absolute go-to for a quick and satisfying snack.

Ingredients

• 16 fresh jalapenos / 450g
• 16 strips of bacon / 340g
• 0.25 cups / 28g shredded cheddar cheese
• 4 oz / 113g cream cheese, softened
• 1 tsp / 6g salt
• 1 tsp / 2g paprika

Instructions

1. Preheat your oven to 350°F / 177°C and line a baking sheet with parchment paper or a wire rack.
2. Slice 16 jalapenos in half lengthwise, then use a spoon to scrape out the stems, seeds, and white membranes.
3. In a small bowl, combine 4 oz / 113g of softened cream cheese and 0.25 cups / 28g of shredded cheddar cheese until smooth.
4. Fill each jalapeno half with the cheese blend, smoothing the top.
5. Slice 16 bacon strips in half crosswise to create 32 shorter pieces.
6. Wrap one half-strip of bacon tightly around each stuffed jalapeno, tucking the seam underneath.
7. Arrange the poppers on your prepared baking sheet, leaving space between each one.
8. Bake for 20 to 25 minutes until the bacon is crisp and the peppers have softened.
9. Remove from the oven and immediately sprinkle with 1 tsp / 6g of salt and 1 tsp / 2g of paprika.

Pro Tips

• Always ensure your cream cheese is softened at room temperature before mixing to prevent lumps and ensure a smooth filling.
• Wear disposable gloves when handling jalapenos to prevent the capsaicin oil from getting on your skin.
• For the ultimate crunch, place a wire cooling rack on your baking sheet. This allows hot air to circulate, preventing soggy bottoms.
• If you prefer extra-crispy bacon, par-cook the strips in the microwave for about 60 seconds before wrapping the peppers.

FAQ

Q: How do I get the bacon extra crispy
A: For the crispiest bacon, bake the poppers on a wire rack set on your baking sheet. This allows hot air to circulate completely. You can also par-cook the bacon strips in the microwave for about 60 seconds before wrapping the peppers.

Q: Are these jalapeno poppers keto-friendly
A: Yes, this recipe is very keto-friendly. With only 1.0g of net carbs per serving, they are an excellent low-carb, high-fat snack that fits perfectly into a ketogenic lifestyle.

Q: How can I make the poppers less spicy
A: The heat of a jalapeno is concentrated in the seeds and the white membranes. To reduce the spiciness, be sure to thoroughly scrape out all seeds and membranes with a spoon before adding the filling.

Q: What is the best way to handle jalapenos
A: To avoid getting spicy capsaicin oil on your skin, it is highly recommended to wear disposable gloves while slicing the jalapenos and removing the seeds and membranes.
