Pork Loin with Leeks

(Total Time: 45 MIN| Serves: 4)

Ingredients:

1 lb pork loin, boneless

1 onion, finely chopped

2 large leeks, chopped

¼ cup apple cider vinegar

2 cups beef broth

1 celery stalk, chopped

4 tbsp olive oil

Spices:

1 ½ tsp sea salt

2 tbsp stevia crystal (or powder)

2 tsp dried celery

¼ tsp dried thyme

¼ tsp chili powder

Directions:

Rub the meat with salt and place in the pot. Pour in enough water to cover and seal the lid.
Set the steam release handle and press the ‘’Maual’’ button. Set the timer for 25 minutes on high pressure.
When done, perform a quick pressure release and open the lid. Transfer the meat to a bowl and remove the water. Set aside.
Press the ‘’Saute’’ button and heat up the oil. Add onions, leeks, and celery. Give it a good stir and cook for 3-4 minutes.
Meanwhile, place the meat on a cutting board and chop into bite-sized pieces. Add to the pot and stir well. Drizzle with apple cider vinegar and season with spices.
Brown for 4-5 minutes, stirring occasionally.
Press the ‘’Cancel’’ button and serve immediately.
