• ½ lb | 227g grass-fed lean ground beef
• 5 slices bacon, cut into bite-sized pieces
• 1 (10-oz | 283g) can diced tomatoes with green chile peppers, undrained
• 8 oz | 226g cream cheese, cubed
• 8 oz | 226g Monterey Jack cheese, freshly shredded
• 4 tbsp | 60ml filtered water

2. Set the Instant Pot to “Sauté” mode. Once hot, melt the butter, then add the bacon pieces and cook until crisp, about 5-6 minutes.
3. Using a slotted spoon, transfer the crispy bacon to a paper towel-lined plate to drain, leaving the rendered fat in the pot.
4. Add the ground beef to the pot and cook, breaking it apart with a spoon, until fully browned, about 8-10 minutes.
5. Press “Cancel” and carefully drain any excess grease from the Instant Pot.
6. Return the cooked bacon to the pot. Layer the undrained tomatoes with green chiles, cubed cream cheese, and water on top of the meat. Do not stir.
7. Secure the lid and turn the pressure valve to the “Sealing” position. Select “Manual” or “Pressure Cook” and set to High Pressure for 4 minutes.
8. Once the timer finishes, perform a quick release by carefully turning the pressure valve to the “Venting” position.
9. When the float valve drops, safely remove the lid. Immediately add the shredded Monterey Jack cheese and stir vigorously until the dip is completely smooth, creamy, and melted.
