• 1 tablespoon chili powder
• 2 teaspoons garlic powder
• 1 teaspoon ground cumin
• 1 teaspoon finely ground sea salt
• ½ teaspoon ground black pepper
• FOR THE TOPPINGS
• ½ medium bell pepper, any color, thinly sliced
• 1 cup / 140 g shredded cheddar cheese (dairy-free or regular), OR 1 batch Walnut “Cheese”
• FOR THE CILANTRO CREAM
• ½ cup / 125 g coconut cream
• ⅓ cup / 20 g fresh cilantro leaves and stems, finely chopped
• 1 tablespoon lime juice
• 1 clove garlic
• ¼ teaspoon finely ground sea salt
• FOR THE WALNUT “CHEESE” (OPTIONAL)
• ¾ cup / 85 g raw walnut pieces, soaked for 24 hours, then drained, rinsed, and finely chopped
• 3 tablespoons olive oil or avocado oil
• ⅓ cup / 22 g nutritional yeast
• 2 teaspoons lemon juice
• ½ teaspoon Dijon mustard
• ¼ teaspoon garlic powder
• ¼ teaspoon onion powder
• Pinch of finely ground sea salt
• Pinch of ground black pepper

Instructions

1. Preheat the oven to 350°F / 177°C. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
2. To make the crust, place the ground beef, crushed pork rinds, onions, chili powder, garlic powder, cumin, salt, and black pepper in a large bowl. Mix until just combined.
3. Press the meat mixture onto the lined baking sheet, shaping it into a rectangle about ½-inch / 1.25-cm thick.
4. Bake the crust for 30 minutes, or until the internal temperature reaches 160°F / 71°C.
5. While the crust bakes, prepare the cilantro cream. Place the coconut cream, cilantro, lime juice, garlic, and salt in a medium-sized bowl and whisk until smooth. Set aside.
6. Remove the crust from the oven. Top it with the sliced bell pepper and shredded cheddar cheese (if using). Return to the oven and bake for another 15 minutes, until the peppers soften and the cheese is melted.
7. Remove the meatzza from the oven. If using the Walnut “Cheese,” sprinkle it over the top now.
8. Cut the meatzza into 8 equal slices and serve immediately with the cilantro cream for drizzling or dipping. Enjoy!
