Simple Holiday Roast

(Total Time: 50 MIN| Serves: 6)

Ingredients:
2 ½ pounds Beef Roast
1 Onion, sliced
2 Garlic Cloves, sliced
2 Celery Stalks, chopped
1 Bell Pepper, chopped
2 tbsp. Olive Oil
2 tbsp. Italian Seasoning
1 cup Red Wine
1 cup Beef Broth
2 tbsp. sugar-free Steak Sauce

Directions:

  1. Heat ½ of the olive oil in your IP on SAUTE.
  2. Add the beef and sear on all sides for about 5 minutes in total. Transfer to a plate.
  3. Heat the remaining olive oil and add the onions, celery, and peppers.
  4. Cook for 3 minutes.
  5. Stir in garlic and seasonings and cook for another minute.
  6. Return the beef to the pot.
  7. Whisk together the broth, sauce, and red wine, and pour this mixture over the beef.
  8. Close the pot and cook on HIGH for 40 minutes.
  9. Do a natural pressure release.
  10. Serve and enjoy!
