A Happy Accident at Sea!

Have you ever had a kitchen plan go completely sideways, only to end up with something even more delicious? That’s exactly how this recipe was born! During a recent sailing trip, exhausted after a long day on the water, I realized I’d forgotten the zucchini for the noodle bowls I had planned. With a hungry crew and limited provisions, I had to get creative.

I had all the fixings for a fantastic meat sauce but nothing to serve it on. Instead of defaulting to chili, I spotted a head of broccoli. A quick roast in the oven, and voilà! I served the rich, savory meat sauce over a bed of crispy, fork-tender roasted broccoli. It was an absolute smash hit! The crew was thrilled, and I discovered a new favorite low-carb, veggie-packed way to enjoy a classic comfort food.

For an extra flavor boost, a generous grating of Parmesan cheese over the top is divine. If you’re dairy-free, a sprinkle of nutritional yeast provides a wonderful cheesy, nutty alternative.

Ingredients

• Meat Sauce
• ¼ cup / 60 ml avocado oil
• 1 pound / 455 g ground turkey
• 1 cup / 240 g canned diced tomatoes
• 1 cup / 250 g tomato sauce
• 1 tablespoon tomato paste
• 2 teaspoons onion powder
• 2 teaspoons dried oregano leaves
• 1½ teaspoons dried basil
• 1 teaspoon garlic powder
• ½ teaspoon finely ground sea salt
• ⅛ teaspoon ground black pepper
• Roasted Broccoli
• 1½ pounds / 680 g broccoli florets
• ¼ cup / 60 ml avocado oil
• 2 teaspoons lemon juice
• ¼ teaspoon finely ground sea salt
• Pinch of ground black pepper

Instructions

1. Preheat the oven to 400°F / 205°C. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
2. Start the meat sauce: Heat the oil in a large frying pan over medium heat for 1 minute, then add the ground turkey. Cook, stirring frequently and breaking up the meat, until no longer pink, about 10 minutes.
3. Meanwhile, roast the broccoli: Place the broccoli florets on the lined baking sheet. Drizzle with the oil and lemon juice, sprinkle with salt and pepper, and toss to coat evenly. Bake for 20 to 25 minutes, until the broccoli is fork-tender and getting crispy on the edges.
4. While the broccoli roasts, finish the sauce. Once the turkey is fully cooked, add the diced tomatoes, tomato sauce, tomato paste, and all dried seasonings to the pan. Stir to combine, cover, and bring to a simmer over medium-high heat. Reduce the heat to medium-low to maintain a light simmer, stirring occasionally, until the broccoli is done.
5. To serve, divide the roasted broccoli among 4 plates. Pile the hot meat sauce on top and enjoy immediately!
