By layering tender eggplant with rich ricotta, savory marinara, and heaps of mozzarella and Parmesan, we create a deeply satisfying casserole that’s pure comfort in a bowl. Whether you’re a full-time vegetarian keto follower or just looking for a delicious meatless Monday option, this slow cooker recipe is your ticket to guilt-free indulgence.

Ingredients

• 2 tablespoons / 30 g ghee or other healthy cooking fat
• 3 medium / 1 kg / 2.2 lb eggplants
• Salt and ground black pepper
• 1 recipe marinara sauce (no sugar added)
• 2 cups / 480 g / 16.9 oz full-fat ricotta cheese
• 2 cups / 226 g / 8 oz shredded mozzarella cheese
• 1 cup / 90 g / 3.2 oz grated Parmesan cheese
• 1/4 cup / 60 ml extra-virgin olive oil
• Fresh basil for garnish

Instructions

1. Grease a 5- to 6-quart (4.7- to 5.7-L) slow cooker with the ghee. Using a sharp knife, slice the eggplant widthwise into thin 1/4-inch (1/2-cm) slices. Season both sides generously with salt and set aside for 20 minutes to draw out moisture.
2. While the eggplant rests, prepare the cheese filling. In a medium bowl, combine the marinara sauce, ricotta cheese, 1.5 cups of the mozzarella, and 3/4 cup of the Parmesan. Mix well and season with salt and pepper to taste. Reserve the remaining mozzarella and Parmesan for the topping.
3. Use a paper towel to pat the eggplant slices completely dry, removing all excess moisture.
4. Begin layering the casserole in the slow cooker. Start with a single layer of eggplant slices, covering the bottom. Top with half of the cheese and marinara mixture. Add another layer of eggplant, the remaining cheese mixture, and finish with a final layer of eggplant slices.
5. Sprinkle the reserved mozzarella and Parmesan cheese evenly over the top layer.
6. To prevent a watery result, place 2 layers of high-absorbent paper towels or a clean tea towel over the top of the ceramic bowl. Cover securely with the lid. Cook on HIGH for 4 hours or on LOW for 8 hours.
7. To serve, let the casserole rest for a few minutes before slicing. Drizzle with extra-virgin olive oil and garnish with fresh basil leaves.

Pro Tips

• Don’t skip salting the eggplant! This crucial step draws out bitter moisture, preventing a watery casserole and ensuring a tender, perfect texture.
• The paper towel or tea towel trick under the lid is essential. It traps condensation that would otherwise drip back into the dish, keeping your parmesan rich and saucy, not soupy.
• For the best melt and flavor, shred your own mozzarella cheese. Pre-shredded cheeses often contain anti-caking starches that can add hidden carbs and affect the texture.
• Choose your marinara wisely. Always use a high-quality, no-sugar-added marinara sauce to keep this recipe truly keto-friendly. Check the label for hidden sugars!

FAQ

Q: Why is my slow cooker eggplant parmesan watery
A: A watery result is often caused by skipping two crucial steps. First, you must salt the eggplant for 20 minutes and pat it completely dry to remove excess moisture. Second, place a paper towel or tea towel under the slow cooker lid to absorb condensation and prevent it from dripping into the casserole.

Q: Is this keto eggplant parmesan recipe gluten-free
A: Yes, this recipe is completely gluten-free. It achieves its classic texture by layering eggplant with cheese and sauce, entirely avoiding the traditional carb-heavy, gluten-containing breadcrumbs.

Q: Can I use pre-shredded cheese for this recipe
A: For the best results, we recommend shredding your own mozzarella. Pre-shredded cheeses often contain anti-caking starches which can add hidden carbs and affect the final texture of the dish.

Q: How do I choose the right marinara sauce
A: To keep this recipe truly keto-friendly, it’s essential to use a high-quality marinara sauce with no added sugar. Always check the nutrition label to ensure there are no hidden sugars or high-carb ingredients.
