Ingredients
• 2 lbs / 907g Ground beef, 85/15 lean recommended
• 2 tbsp / 30g Taco seasoning
• 8 oz / 226g Sharp cheddar cheese, shredded
• 1 cup / 240ml Salsa, your favorite kind
• 16 oz / 450g Cottage cheese

2. Preheat your oven to 400°F / 200°C and lightly grease a 9×13 inch casserole dish.
3. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart with a spoon. Drain off any excess grease.
4. Stir the taco seasoning into the cooked beef until it’s evenly coated. Spread the seasoned meat in the bottom of your prepared casserole dish.
5. In a medium bowl, combine the cottage cheese, salsa, and half of the shredded cheddar cheese. Mix well.
6. Spoon the cheese mixture evenly over the layer of ground beef.
7. Sprinkle the remaining shredded cheddar cheese over the top.
8. Bake for 15-20 minutes, or until the casserole is hot, bubbly, and the cheese on top is melted and slightly golden. Let it rest for 5 minutes before serving.
