Pork Butt in Garlic Gravy

(Total Time: 50 MIN| Serves: 5)

Ingredients:

2 lbs pork butt, cut into 5 smaller pieces

4 bacon slices, chopped

2 large celery stalks, finely chopped

6 pickles, sliced

¼ cup balsamic vinegar

3 garlic cloves, crushed

2 tbsp soy sauce

4 tbsp olive oil

1 ½ cups beef stock

Spices:

1 tsp salt

½ tsp black pepper, freshly ground

½ tsp chili powder

½ tsp dried basil

½ tsp dried marjoram

1 tsp garlic powder

Directions:

Rinse well the meat and pat dry with some kitchen paper. Place on a large cutting board. Using a sharp knife, make 7-8 incisions in each part. Stuff each with celery, garlic, and pickles. Sprinkle with salt, pepper, and chili powder. Set aside.
Plug in the instant pot and grease the inner pot with oil. Heat up and add the remaining celery. Cook for 2-3 minutes and then add bacon.
Continue to cook for another 5 minutes.
Now add the pork and pour in the beef stock. Seal the lid and set the steam release handle. Press the ‘’Manual’’ button and set the timer for 15 minutes.
When done, perform a quick pressure release and open the lid. Press the ‘’Saute’’ button again and pour in the soy sauce. Sprinkle with basil, marjoram, and garlic powder. Cook for 6-7 minutes.
When done, press the ‘’Cancel’’ button and serve immediately.
