    CHARCUTERIE BOARD

    MAKES: 10 servings · PREP TIME: 20 minutes

    A charcuterie board is the perfect way to enjoy a delicious appetizer with friends and family. Pour a glass of wine or two and dig in! There is sure to be a little something on there for everyone. The thing I love most about a good charcuterie board, besides how visually stunning it is, is that there are no rules. You can fill the board with literally anything you want. The traditional offerings are meats and cheeses, but I think those of us who live a dairy-free keto lifestyle are used to doing things in a less-than-traditional fashion.

    INGREDIENTS

    • 8 ounces sliced Italian dry salami

    • 3 ounces sliced capicola

    • 3 ounces sliced pancetta

    • 3 ounces sliced prosciutto

    • 10 marinated artichoke heart quarters

    • 10 mini dill pickles

    • 10 garlic-stuffed queen olives

    • 10 pepperoncini

    • 10 fresh blackberries

    • 5 fresh strawberries, hulled and halved

    • 2 tablespoons stone-ground mustard

    • ⅓ cup giardiniera

    • ⅓ cup mixed nuts

    • ¼ cup sugar-free dried cranberries, store-bought or homemade (here)

    • ¼ cup Pickled Red Onions (here)

    • ¼ cup pitted Kalamata olives

    • ¼ cup Garlic Dill Sauerkraut (here)

    DIRECTIONS

    Arrange all the ingredients on a large platter or cutting board. Be sure to put any watery ingredients or ingredients that might roll off the plate in little dishes of their own.

    tip: If you aren’t avoiding dairy, you can also load up this tray with a variety of your favorite cheeses.
