Fried Cabbage and Bacon

    I remember my mom frying cabbage; back then, I never liked it. It turns out that it’s another one of those foods that I appreciated more as I got older. And I’m pretty sure Mom didn’t put bacon in hers! Remember, bacon was a “bad-for-you” food in the 1980s.

    • 4 slices bacon, chopped
    • 1 medium-head green cabbage, coarsely chopped
    • ½ teaspoon salt
    • ¾ teaspoon ground black pepper

    1. In a medium-sized skillet over medium heat, cook the bacon until crispy. Use a slotted spoon to remove the bacon and set it aside.

    2. Put the cabbage in the skillet with the bacon drippings and cook, stirring frequently, for about 10 minutes, until tender. Return the bacon to the pan, add the salt and pepper, and continue cooking for 5 more minutes. Serve immediately.
