Butter Chicken

Ingredients:

  • 3 tbsp unsalted butter
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 1.5 pounds (24 ounces / 680g) grass-fed chicken breasts, cut into 0.75-inch chunks
  • 2 tomatoes, chopped finely
  • 1 tbsp garam masala
  • 1 teaspoon red chili powder
  • 1 teaspoon ground cumin
  • Salt and ground black pepper, as required
  • 1 cup heavy cream
  • 2 tbsp fresh cilantro, chopped

Directions:

  1. Melt 3 tbsp of butter in a large wok over medium-high heat. Add the chopped onions and sauté for about 5–6 minutes.
  2. Now, add the minced ginger and garlic and sauté for about 1 minute.
  3. Add the tomatoes and cook for about 2–3 minutes, crushing them with the back of a spoon.
  4. Stir in the chicken, 1 tbsp garam masala, 1 tsp red chili powder, 1 tsp ground cumin, salt, and black pepper. Cook for about 6–8 minutes or until the chicken reaches your desired doneness.
  5. Stir in 1 cup of heavy cream and continue to cook for about 8–10 more minutes, stirring occasionally.
  6. Garnish with 2 tbsp of fresh cilantro and serve hot.
