Signature Italian Pork Dish

Prep time: 15 minutes Cook time: 15 minutes Servings: 6

Ingredients

  • 32 oz (907 g) pork tenderloins, cut into 1.5-inch pieces

  • 0.25 cups almond flour

  • 1 tsp garlic salt

  • Freshly ground black pepper, to taste

  • 2 tbsp butter

  • 0.5 cups homemade chicken broth

  • 0.33 cups balsamic vinegar

  • 1 tbsp capers

  • 2 tsp fresh lemon zest, grated finely

Directions

  1. In a large bowl, combine the pork pieces, almond flour, garlic salt, and black pepper. Toss until the meat is coated well.

  2. Remove the pork pieces from the bowl and gently shake off any excess flour mixture.

  3. In a large skillet, melt the butter over medium-high heat. Cook the pork pieces for approximately 2 to 3 minutes per side.

  4. Pour in the chicken broth and balsamic vinegar, bringing the mixture to a gentle boil.

  5. Reduce the heat to medium and let simmer for about 3 to 4 minutes.

  6. Using a slotted spoon, transfer the cooked pork pieces onto a plate.

  7. In the remaining liquid in the skillet, add the capers and lemon zest. Simmer for 3 to 5 minutes, or until the sauce reaches your desired thickness.

  8. Pour the finished sauce over the pork pieces and serve immediately.
