Seafood Paella

(Total Time: 30 MIN| Serves: 4)

Ingredients:
1 cup chopped Fish
2 cups Shellfish (clams, mussels, shrimp)
2 cups Cauliflower Rice
1 Red Bell Pepper, diced
1 tbsp. Ghee
1 Green Bell Pepper, diced
1 Onion, sliced
4 cups Fish Stock
A pinch of Saffron
Salt and Pepper

Directions:

  1. Melt the ghee in the Instant Pot.
  2. Add peppers and onion and cook for 3 minutes.
  3. Stir in the fish, rice, stock, and saffron.
  4. Close the lid and cook for 2 minutes on HIGH.
  5. Release the pressure naturally.
  6. Add the shellfish (do NOT stir) and close the lid.
  7. Cook for 3 more minutes.
  8. Let the pressure drop naturally.
  9. Serve and enjoy!
